ethereal -b files:10 -a filesize:1000 -w foo.capture

the only catch that i'm not sure of is the filesize. ethereal uses 1000 bytes = 1 Kb, not 1024, so it's conceiveable that 1 Mb = 1000 Kb and not 1024, but that piece i'm not quite sure of.
